Instructions

  1. Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, crack the 3 large eggs and add 1 cup of granulated sugar. Beat on high speed for about 5 minutes until thick and pale.
  3. Stir in 1 teaspoon of vanilla extract.
  4. In a separate bowl, sift together 1/3 cup cocoa powder, 1 teaspoon baking powder, 1/4 teaspoon salt, and 1/2 cup flour.
  5. Gently fold the dry ingredients into the egg mixture using a spatula, being careful not to deflate the batter.
  6. Drizzle in 1 tablespoon of vegetable oil and fold until just combined.
  7. Pour the batter into the prepared pan, spreading it evenly. Bake for 12-15 minutes until the cake springs back when touched.

  13. In a large mixing bowl, pour in 1 cup of heavy whipping cream.
  14. Add 1/4 cup powdered sugar and 1 teaspoon vanilla extract.
  15. Beat on medium-high speed until soft peaks form, being careful not to overbeat.
